Psyllium (Plantago Ovata) : Psyllium husk is derived from the seeds of the Plantago Ovata plant and is one of the best natural sources of dietary fiber. India ranks first in Isabgol production (98%) and the only international supplier. The Indian name Isapghol is originated from the Sanskrit word asw and ghol which means horse’s ear, as the seed’s shape resembles a horse’s ear. Harvested seed must be dried to below 12% moisture to allow for cleaning, milling, and storage. Seed stored for future crops has shown a significant loss in viability after 2 years in storage. Mucilage yield amounts to about 25% (by weight) of the total seed yield. The milled seed mucilage is a white fibrous material that is hydrophilic, meaning that its molecular structure causes it to attract and bind to water.
Isabgol is rich in fibre and mucilage. Mucilage is a colourless gelling agent capable of expanding in volume as it absorbs water up to 40 times its weight. It is widely used as a bulk-forming laxative for the treatment of constipation and for improving overall digestive health. Its gentle action on the intestinal wall helps regulate bowel movements without causing irritation. It also supports cholesterol reduction and can be used as a natural appetite suppressant in weight management regimes. Psyllium is often found in supplements, functional foods, and herbal blends.
Psyllium has been used as a thickener in ice cream and other frozen desserts. A 1.5% weight/volume ratio of psyllium mucilage exhibits binding properties that are superior to a 10% weight/volume ratio of starch mucilage. The viscosity of psyllium mucilage dispersions are relatively unaffected between temperatures of 20 and 50 °C (68 and 122 °F), by pH from 2 to 10, and by salt (sodium chloride) concentrations up to 0.15 M. Psyllium seed husks can also be used to improve texture in gluten-free baked goods, to bind meatballs, and to thicken sauces.
